Try this delicious sesame rich salmon for a quick weeknight meal today. Roasting protein & vegetables in the oven can help decrease standing cook time. Try making sheet pan meals when looking for easy prep meals. This meal is filled with omega 3 fatty acids, protein, vitamin C & vitamin A.
Sesame & Scallion Crusted Salmon with Roast
Bok Choy
Total Time: 30 minutes
Makes 4 servings
Ingredients:
1 pound of salmon cut into ¼ pound strips
2 Tbs sesame seeds
1/4C scallions diced
1 Tbs sesame oil
1 lime juiced
pinch of salt
8 small bok choy, sliced in half lengthwise
1 Tbs olive oil
4C prepared jasmine rice
Preheat oven to 400 degrees. While oven is preheating set up a large baking sheet and add fresh bok choy and toss in olive oil. Sprinkle with a pinch of salt.
Place salmon pieces on the baking sheet leaving 1 inch space between them. On each salmon piece cover with ¼ of the sesame oil and a pinch of salt rubbing it into the flesh, then add a little lime juice to each piece. Sprinkle with sesame seeds and scallions until there is a good coat on each piece.
Place baking sheet in the oven and cook for about 15-20 minutes, flipping bok choy one time in the middle to help it roast evenly.
While salmon and bok choy are cooking prepare jasmine rice according to package instructions.
Tips: When roasting in the oven, ensure there is enough space in between vegetables and proteins and aim for having smaller pieces of protein for quicker cooking. Don’t forget to flip vegetables mid- way through cooking to help with even roasting.
